Cheesy Garlic Cauliflower “Bread”

Keto Cheesy Garlic Cauliflower “Bread” is the perfect side dish to any meal. Packed full of flavour & the smell is just amazing.

This is a fantastic replacement for Garlic bread and goes amazingly well with our “Spaghetti Bolognaise”.   Also brilliant with hot sauce.

This turns out unbelievably juicy and tender, with a delicious aroma from the Garlic, different cheeses & herbs.

Ingredients

1 Cauliflower (raw)
1 Cup / 130g Shredded Mozzarella
½ Cup / 65g grated Cheddar
¼ Cup / 30g grated Red Leicester
1 Large Egg

2 Garlic Gloves, grated
½ Red Onion – Finely diced
1 tablespoon fresh basil – chopped
1 tablespoon fresh flat leaf parsley – chopped

Kosher Salt & Pepper to taste

Keto Garlic Cauliflower Cheesey “Breadsticks”

Instructions

Preheat Oven to 425 F / 200 C
Line baking sheet with parchment / baking paper
Rice the cauliflower by breaking off the florets and pulsing in food processor until it is the texture of rice.
Remove any excess moisture by squeezing in paper towel.Also brilliant with hot sauce.
In a large bowl, mix the cauliflower, ½ the Mozzarella, the cheddar, the Red Leicester, the basil, the parsley, the egg, salt and pepper and mix until combined and all holds together.

Place mixture onto lined baking sheet and spread out until ¼ inch thick
Bake in pre heated over for 10-12 minutes.
Remove from oven and add remaining mozzarella, return to oven until topping is starting to brown. Leave to cool for 10 minutes.
