Keto Chicken Fajitas

Keto Chicken Fajitas is a one of our favourite Go-to Meals and satisfying. By replacing a regular wrap with a Mozzarella Wrap It’s low carb, family friendly, and sure to be a hit thanks to the great flavours!.

The chicken is juicy and moist, and you can make it as spicy or as mild as you want, just adjust the spices accordingly.

Ingredients

2 Large Chicken Breasts – Butterflied
1 Red Bell Pepper – Sliced
1 Yellow Bell Pepper – Sliced
1 Green Pepper – Sliced
1 Red Onion – Sliced
3 Jalapeños – Sliced
1 teaspoon paprika
1 teaspoon Chilli powder (Mild or Hot – Your choice)
1 teaspoon Cayenne Pepper
1 teaspoon garlic powder
1 teaspoon Turmeric
1 teaspoon Cumin
1 teaspoon salt
1 Pack of Shredded Mozzarella or 2 Balls of Buffalo Mozzarella (Frozen – then Grated)
1 Avocado – Chopped
Lettuce – Sliced
150 g of Natural Yoghurt
1 teaspoon chopped mint mixed with a splash of vinegar

Instructions – The Fajita Mix

  1. Butterfly the Chicken Breasts.
  2. Slice the Peppers & Onions.
  3. Heat a large, heavy bottomed skillet over medium heat. Add the oil to the skillet.
  4. Cook the Chicken so it is just starting to colour. Remove from skillet & set aside
  5. Add Peppers, Onions & Chilli’s to Pan.
  6. Cook until peppers are starting to brown.
  7. Add Chicken back to Pan
  8. Combine the spices and sprinkle into the pan, continue to cook and ensure everything is well coated.
  9. If required add a couple of teaspoons of water to help the process.

Instructions – The Wraps

  1. Cut 4 – 6 squares of grease proof paper
  2. Make a circle with the grated Mozzarella
  3. Place in the oven until bubbling
  4. Remove from Oven.
  5. Slide circle of Mozzarella off the grease proof paper and lay over the handle end of a wooden spoon so it starts to take a Taco shape
  6. Repeat for the rest..

Instructions – Assembly

  1. Fill the Cheese shells with the Fajita Mix
  2. Add Lettuce
  3. Add Guacamole
  4. Add Mint Yoghurt
  5. Serve
